Passionate wine grower, Erick De Sousa was able to pass down his love for noble terroirs to his 3 children, Charlotte, Julie and Valentin, to continue the family saga started in the fifties. A vineyard of 9.5 hectares, cultivated in harmony with nature according to the organic viticulture principles, gives birth to around 85,000 bottles of rare Champagnes per year. Pure attack allowed by an adjusted dosage, with only 3 g/L of sugar added at disgorgement, enhanced by the vibrant minerality which carries us throughout the tasting. Lo champagne Brut Tradition è un assemblaggio di diverse annate. I pinot noir conferiscono rotondità, i pinot meunier vinosità, mentre gli chardonnay apportano una nota di freschezza.
Il vero biglietto da visita di questo produttore nell’espressione del grande e celebre Chardonnay della Côte des Blancs, quindi non solo Avize, ma anche Cramant, Oger, Choully e Le Mesnil.
Questo Brut Rosé è un rosé di assemblaggio, ma la composizione è del tutto particolare poiché deriva da 90% di chardonnay e da 10% di pinot noir.
Il nome sta a indicare i tre villaggi Grand Cru di Avize, Aÿ e Ambonnay, le cui uve contribuiscono rispettivamente per il 50%, il 25% e ancora il 25%.

La qualità comincia innanzitutto con le cure apportate ai vigneti e alla terra. Per questa ragione Erick de Sousa ha scelto il metodo della coltivazione biodinamica, atta a ridinamizzare il terreno.
Entrambe le varietà sono vinificate in barrique, ma lo Chardonnay vi rimane 6 mesi con periodici bâtonnage, mentre il Pinot Noir un anno intero.
